Pesto Pasta with Chicken
Pesto pasta with pan cooked chicken breast. Quick and easy.
Ingredients
8 oz pasta
1/4 cup pesto sauce
1/4 cup sun-dried tomatoes, cut into strips
2 clove garlic, minced
1 pinch red pepper flakes
1 chicken breast, cut into 1" pieces
Preparation
1. Season chicken with salt and pepper. Add olive oil to skillet and cook over medium-high heat. Add garlic and red pepper flakes once chicken is almost finished and cook until done.
2. Meanwhile, boil pasta. Once pasta is about 1 minutes from being done, drain, reserving 1 cup of pasta water. Add pasta back to pot along with pesto sauce and 1/4 cup of pasta water. Cook, tossing and stirring until pasta is done. Add pasta water as necessary.
3. Once pasta is done, stir in chicken and sun-dried tomatoes.
