Banana Bread Mug Cake

Chef John's banana bread mug cake in a minute. A quick, easy, and surprisingly delicious banana bread made in the microwave.

Ingredients

1 medium, ripe banana

2 tbsp packed brown sugar

1/4 tsp kosher salt

1/4 tsp baking soda

3 tbsp melted unsalted butter

1 tbsp milk

1/8 tsp vanilla extract

1/2 cup flour

2 tbsp chocolate chips

Preparation

1. Combine ripe banana, brown sugar, white sugar, salt, baking powder, baking soda, melted butter, milk, and vanilla in a mixing bowl. Use fork or potato masher to mash into smooth puree. Add flour and mix until just combined. Stir in chocolate chips.

2. Transfer batter evenly into two lightly buttered coffee mugs or cups. Tap a few times on a towel to settle everything down and ensure there are no air pockets.

3. Microwave cups, one at a time, until a toothpick comes out clean, about 1 to 1.5 minute.
