Creamy Garlic Pasta
A quick and simple pasta dish with lots of garlic.
Ingredients
1 head garlic, peeled and kept whole if small, sliced in half if large
1/4 cup olive oil
1/2 lb spaghetti
1/2 tsp honey
2 oz parmesan, grated
1 lime, juiced
Preparation
1. Bring salted water to a boil.
2. While water heats, add garlic and olive oil to pan or pot and place over low heat. Cook, stirring occasionally, until garlic becomes light golden and cloves are very soft, about 15 minutes.
3. Cook pasta until it is 1-2 minutes from being done. Drain, reserving 2 cups of the pasta water.
4. While pasta cooks and once garlic is just starting to take on a golden coloring, add honey to pan and stir to combine. Increase heat to medium and cook, stirring constantly, until garlic cloves just start to turn lightly brown in spots. Add 1/2 cup of the pasta water, increase heat to high, and bring to a boil.
5. Add pasta to pan with garlic. Cook, stirring and tossing constantly, until sauce becomes creamy and emulsified. Add pasta water in 1/4 cup increments as necessary to stop sauce from becoming oily or if pasta starts to fry.
6. Once sauce is emulsified and pasta is cooked, turn off heat and add parmesan. Toss and stir to incorporate. Add lime juice and toss. Season to taste with salt.
7. Serve with additional cheese and lime if desired.
